- When baking cakes and cupcakes, add 1 extra egg than the recipe calls for. Make sure to fully incorporate into the mix. This will help to make your gluten free cakes extra moist and fluffy
- If you are making a vegan cake, the same rule applies. Whether using egg replacer or flax seed, use an extra tablespoon plus 3 extra tablespoons of lukewarm water and mix completely. Do this before incorporating into the rest of your batter. Again, you’ll end up with a fluffier and more moist gluten free cake.
